July Summer Salad | Italian Tuna & Veggie Pasta Salad

Ingredients (serves 5):

  • 5 cups cooked rotini pasta (cooled)
  • 20 oz canned tuna in olive oil, drained
  • 1 cup cherry tomatoes, halved
  • 1 cup artichoke hearts, chopped
  • 1 cup roasted red peppers, sliced
  • ½ cup black olives, sliced
  • ¾ cup Italian vinaigrette
  • ¼ cup chopped basil
  • ½ cup shredded mozzarella or parmesan

Instructions:

  1. Combine pasta, vegetables, tuna, and olives in a large bowl.
  2. Toss with vinaigrette and basil until evenly coated.
  3. Sprinkle with mozzarella or parmesan just before serving.

Zesty Italian Vinaigrette

Ingredients:

  • ¼ cup red wine vinegar
  • ¼ cup extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Add all ingredients to a jar with a lid. Shake vigorously until well mixed.
  2. Let sit 10 minutes before serving to allow flavors to meld.
