Ingredients (serves 5):
- 5 cups cooked rotini pasta (cooled)
- 20 oz canned tuna in olive oil, drained
- 1 cup cherry tomatoes, halved
- 1 cup artichoke hearts, chopped
- 1 cup roasted red peppers, sliced
- ½ cup black olives, sliced
- ¾ cup Italian vinaigrette
- ¼ cup chopped basil
- ½ cup shredded mozzarella or parmesan
Instructions:
- Combine pasta, vegetables, tuna, and olives in a large bowl.
- Toss with vinaigrette and basil until evenly coated.
- Sprinkle with mozzarella or parmesan just before serving.
Zesty Italian Vinaigrette
Ingredients:
- ¼ cup red wine vinegar
- ¼ cup extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp salt
- ¼ tsp black pepper
- Pinch of red pepper flakes (optional)
Instructions:
- Add all ingredients to a jar with a lid. Shake vigorously until well mixed.
- Let sit 10 minutes before serving to allow flavors to meld.
